Ingredients
Pastry:
- 250 g flour
- 125 g butter
- 70 g caster or icing sugar
- 2 egg yolks
- 5 cl of water (or milk)
- 1 pinch salt
Custard cream:
- 1 l of milk
- 1 vanilla pod
- 150 g caster sugar
- 4 eggs
- 50 g flour
- 40 g cornstarch
- 2 tablespoons rum
- 50 g of grated coconut
- Preheat oven to 200 ° C.
- For the pastry: mix the flour, grated coconut, sugar, salt together then add the soft butter and sand with your fingers. Add the glass of milk and knead until a smooth ball. The dough should be soft and smooth. Let it rest for 30 minutes in the refrigerator.
- Once this time elapsed line the bottom of a pie pan of this paste and set aside.
- For the custard cream: Prepare the custard cream thrilling milk. Split the vanilla pod in two in the lengthwise and scrape the seeds in, add the milk with the pod.
- In a bowl, work the sugar and the eggs, then add the flour. Stir slowly with milk (after removing the vanilla), whisking briskly. Put everything into the pan and thicken a few minutes over low heat.
- Pour the cream over the pastry and bake about 40 minutes at 200 ° C. Turn out and serve hot cold.
