Cheesecake with cherry scent of cinnamon - Recipe


Preparation
  • Cherries 300 g
  • sugar 160 g
  • biscuits 200 g
  • 300 g Philadelphia cream cheese type
  • 2 egg yolks
  • 3 tablespoons fresh cream
  • cinnamon
  • 6 g gelatin sheets
  • butter 130g
  • untreated lemon 1
Method

Wash the cherries, conservatene 6 for decoration and the other cut in half by eliminating the core. Gathered in a large pan 40 g of sugar, a little glass of water and lemon zest finely chopped. Bring to a boil over high heat, add the cherries, reduce the heat and after a few minutes remove from heat.

Melt 100 g of butter, let it cool and shake it with cookies and lots of cinnamon. Line a mold of 18 cm with parchment paper, imburratela with the remaining butter and form a compact base with the compound of biscuits. Refrigerate for 30 minutes.

Soften the gelatin in cold water, squeeze and melt into the cream in a double boiler. Whip the egg yolks with the remaining sugar and incorporate the cheese with an electric mixer. Add the cherries in syrup and cream with gelatin. Pour the mixture into the mold, completed with the remaining cherries and transferred the cake in the fridge for a few hours. For transportation: put the cake in a cake pan and transfer it in a takeaway bag refrigerated.
